Here’s a family recipe from the Alamilla family that would be perfect for a movie night with family or friends!
Below are the ingredients needed to prepare their homemade recipe for red enchiladas:
Ingredients
– 12 corn tortillas
– 2 cups of red sauce (you can use guajillo chili or ancho chili sauce)
– 2 cooked and shredded chicken breasts
– 1 cup of crumbled fresh cheese
– 1 medium onion, finely chopped
– 1 cup of crema
– Vegetable oil
– Salt to taste
Now for the instructions.
Instructions
- Prepare the sauce – If you don’t have prepared red sauce, you can make it by soaking 6 guajillo chilies (or ancho chilies) in hot water until they are soft. Then, blend them with 2 garlic cloves, 1/4 of an onion, 1 tomato, and some of the soaking water. Strain the sauce and season with salt to taste.
- Cover with sauce – Cover the tortilla with red sauce until it is well covered.
- Heat the tortillas – In a skillet, heat some vegetable oil and lightly fry each tortilla for a few seconds on each side. This helps prevent the tortillas from breaking when rolled.
- Fill the tortillas – Place a portion of shredded chicken in the center of each tortilla. Roll the tortillas and place them on a plate or baking dish.
- Bake (optional) – If you prefer, you can bake the enchiladas at 350°F (180°C) for about 10-15 minutes to heat them through and blend the flavors.
- Serve – Serve the enchiladas hot, sprinkled with chopped onion, crumbled fresh cheese, and a bit of crema.
Additional Tips:
– You can add other ingredients to the filling, such as cheese, refried beans, or vegetables.
– Serve the enchiladas with rice and beans for a complete meal.
Enjoy!
